Trey Parker has to have had practical experience with the Church of Jesus Christ of Latter-day Saints or he is a member or former member. Mormons are equal to all religions, just like the Easter Bunny is equal to all holiday fairy tales.
I see no offensive nature in slamming a concept that is based on lies and deceit, but if it makes you sleep better at night, power to you. Mormons should feel fortunate, South Park has ripped Catholics, Jews, and Scientologists much much worse than they've ripped lowly Mormons.
